<p><span style="font-family: Times New Roman; font-size: 12pt;">The following is a favorite dish that I occasionally make at other times of the year but it is a tradition at Sukkot. Unlike traditional Greek Moussaka this one is a kosher <em>meat </em>dish if those distinctions are important to you. This recipe is adapted from a Jewish cook book that is unfortunately out of print.<br />

<p><span style="font-family: Times New Roman; font-size: 12pt;">During Sukkot our meals are casual and we dish up in the kitchen and head out to dine in the Sukkah.<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">My FAVORITE Moussaka Recipe<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;"> 4 large potatoes, peeled and very thinly sliced<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">1 medium eggplant, peeled and very thinly sliced<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">1 lb. ground beef or lamb<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">5 eggs<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">2 tomatoes, peeled, seeded and chopped<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">2 onions, chopped<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">1/4 cup chopped parsley<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Pinch of cinnamon<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">1 teaspoon ground nutmeg<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">1/2 cup olive oil<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Salt and pepper<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Preheat oven to 350.<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Boil the potatoes slices for 5 minutes, drain, and reserve.<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Salt the eggplant well, weight them under a heavy plate for 30 minutes, rinse well and pat dry<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">In a large bowl mix the ground beef, 2 eggs, onion, tomatoes, parsley, cinnamon, nutmeg, oil, salt and pepper<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Oil the bottom of a deep casserole dish (10&#215;14 in.)<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Line with a layer of 1/2 the potato slices, add a layer of 1/2 the eggplant slices and then add all the meat filling.<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Add a layer of the remaining eggplant and finish with a layer of remaining potato slices.<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Separate 3 eggs and beat yolks with 1 teaspoon of olive oil and a pinch of salt until creamy<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Beat the whites until stiff and fold into the yolks.<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Pour this over the potatoes and sprinkle with additional nutmeg.<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">Bake at 350 for 45minutes<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 12pt;">The taste is improved if the Moussaka is made several hours or even a day in advance and re-warmed before serving. It should not be served very hot .. Serves 4-6<br />
</span></p>
<p><span style="font-family: Times New Roman; font-size: 14pt;"><strong> This is a very filling dish and all you need to accompany it is a green salad sprinkled with feta . Enjoy!<br />

<p>Dear Raw Milk Advocate:<span style="font-family: Verdana; font-size: 10pt;"><br />

<p>As you may be aware, there are currently proposed legislative rules before the House and the Senate in <span style="font-family: Verdana; font-size: 10pt;">Boise concerning Cow/Herd Share Programs in Idaho and our ability as Farmers to continue to provide these services to people who wish to use them.  There are some good parts to the proposed rules which will help to assure the cleanliness of the milk, such as regular testing of the milk for bacteria counts, etc.  However, there is one proposal which could, in effect, drastically limit the availability of raw milk from Herd Share Programs in the future.  That is that <span style="text-decoration: underline;">each herd would be limited to no more than three lactating cows or seven goats or sheep</span>.<br />
</span></p>
<p>This limitation, in my opinion, is unrealistic, as it in no way serves to reduce the risk of contaminated milk; safe milk depends on cleanliness. But it <span style="text-decoration: underline;">does </span>severely limit the amount of milk a single farm can produce for its boarders.  Therefore it will limit the number of consumers who can use the boarding services.  <span style="font-family: Verdana; font-size: 10pt;"><br />
</span></p>

<p>Deb Cameron had the very successful Henny Penny Market in south Nampa.  She will be managing the new Co Op .  Her management style is one of a team builder who has the gift of bringing out   the talents of her employees.  I have learned a lot from Deb over the years that I have known her. Her entrepreneurial spirit is based in integrity and a love for this community.</p>
<p>Deb has an eye for beauty and a passion for real food. I look forward to working and growing alongside this strong, gentle woman as we bring our dream to reality.</p>

<h3>Martial Law? in a Food Bill?</h3>

<p><span style="font-weight: normal;">HR 2749 is a strange bill in many ways.  While the other “food safety” bills have been around since winter, allowing for much </span><a href="http://www.youtube.com/watch?v=LGZL6q-3LOw"><span style="font-weight: normal;"><span style="color: #0000ff;">public discussion</span></span></a><span style="font-weight: normal;"> on the internet, HR 2749 has only suddenly appeared.  It is a mutant conglomeration of the worst of the other bills, with the addition of one very original part – martial law.</span></p>
<p><span style="font-weight: normal;">When it was a draft, it was Waxman’s bill.  But once given a number, it became Dingel’s who already had a “food safety” bill, HR 759.  So Waxman got none and Dingel got two.  (Was this because Waxman, being Jewish, was a hideous choice to introduce a bill with Codex in it – </span><a href="http://www4.dr-rath-foundation.org/PHARMACEUTICAL_BUSINESS/history_of_the_pharmaceutical_industry.htm"><span style="font-weight: normal;"><span style="color: #0000ff;">designed by the Nazi pharmaceutical companies that funded Hitler</span></span></a><span style="font-weight: normal;">, provided the gas for the gas chambers, experimented on prisoners with vaccines – and is expected to kill millions?) </span></p>
<p><span style="font-weight: normal;">* HR 2749 would give FDA the power to order a quarantine of a geographic area, including “prohibiting or restricting the movement of food or of any vehicle being used or that has been used to transport or hold such food within the geographic area.” </span></p>
<p><em><span style="font-weight: normal;">[This - "that has been used to transport or hold such food" - would mean all cars that have ever brought groceries home or any pickup someone has eaten take-out in, so this means ALL TRANSPORTATION can be shut down under this.  This is using food as a cover for martial law.]</span></em><span style="font-weight: normal;"> </span></p>
<p><span style="font-weight: normal;">Under this provision, farmers markets and local food sources could be shut down, even if they are not the source of the contamination.  The agency can halt all movement of all food in a geographic area. </span></p>
