MSG, or Monosodium Glutamate is a salt of the amino acid – Glutamic Acid (glutamate). A salt is the chemical name for a molecule held together by opposite charges. Basically one (mono) sodium atom is “stuck” to the amino acid glutamate.

Golly, the Japanese must have really been hurt by MSG because they’ve been using it for over 100 year. And yet they’re the healthiest and longest-living people on earth… hmm.
That’s probably WHY they aren’t bothered with it like many people of European ancestry are…On the flip side the Japanese don’t fair very well with white wheat flour products and other predominately western staples. Genetics plays a big role in food tolerance.
They MSG that naturally occurs isn’t the problem. It’s the copious amounts of the “enhanced” food stuffs the SAD diet bombards the body with on a regular basis.
Getting sick from food is no fun. If you are one of the fortunate ones that has no adverse reactions to eating “junk” foods then have at. Not everyone is so lucky .
Oh and BTW I like Mexican sodas too… No HFC’s :0)

That’s an interesting theory for why everyone in China doesn’t get a headache (China, Japan, and Taiwan all consume much more added MSG than we do), but I don’t think there’s any evidence for it.
We agree on real sugar though. HFCS tastes like crap compared to the pure sweetness of cane sugar. Corn subsidies screw up the food market in the US and around the world.
